Cocoa powder is made by unsweetened cocoa beans by powdering slightly defatted. Powder makes an intense chocolate flavor. It comes in two versions; one Dutch processed and the other treated with alkalized natural variety. The powder is light brown in color and has a strong flavor. The main variety is milder, less acidic, and has a darker in color.
Cocoa beans produces unsweetened chocolate which is called “bitter” and is pure chocolate liquor. This is quite bitter taste and is usually used for cooking. Since cocoa is rich in cocoa solids and cocoa butter, unsweetened chocolate that gives the deep flavor of baked goods.
